Our February was very mellow and while it started it off snowy and cold it has rapidly warmed and feels like spring is right around the corner.
To celebrate Valentines day this year Eris planned a "Heart" healthy meal. Starting with Carrot Ginger Soup, it was garnished with crispy carrot greens. Very delish!
For dessert she made Olive Oil Chocolate Chip Cookies. No butter or shortening and Whole Wheat flour. The kids and I enjoyed them, they were crispy almost like a shortbread cookie.
It was a great meal, made even better by the thought and effort Eris put into it and the fact that it was good for us!
I had a quick errand to run early one morning and left the kids with one simple instruction, "Get Ready for the Day".
This is what I found when I walked through the door. The two of them doing Pilates together. I love that even when I am gone they start their day with exercise, it feels great to know that they take what you try to teach them to heart! I was very proud of them, especially for taking their health and well being seriously even when I am gone.
Eris is finishing up her Girl Scout Cookie sales. She had a pretty good year thanks to the support of all of you! This year the girls decided to do a door to door sale day. We have honestly never gone door to door, so it was a new experience for Eris. The girls had a blast, only two houses bought from them, but they were laughing and chatting the whole time and had fun just spending time together!
Finishing up the month we had Cub Scouts Blue and Gold, that means that Beren will be crossing over to Webelos 2 in just three months, and that also means a Tan Shirt!!
The very next night was Girl Scouts Thinking Day! (The two biggest Scouting events back to back)
For Thinking Day the Girl Scout Troops each pick a country and does some research on the country and the life of girls their age there. Then they present what they have learned with a food from that country and a trinket to hand out at their booth.
This year Eris's troop did Italy. They served Tortellini and made felt ravioli pins to hand out to the little girls. This is actually Eris's second time doing Italy but it was interesting for her to do it again since the last time she was only 6.
Thinking day wrapped up with a Giant Friendship circle. Unfortunately my camera couldn't fit All the girls, but it was fun!
Were are looking forward to Spring and wrapping up our school year!!
